Storage:
- Unripe Avocados: Can be stored at room temperature, to allow them to ripen. Do Not store unripe avocados in a refrigerator as they will not ripen.
- Ripe Avocados: Can be stored in the fridge for up to 3 days depending on ripeness. The cold temperatures slow any further ripening.
- Cut Avocados: Once an avocado is cut the clock is ticking and browning will occur due to oxidation. To slow this process, you can implement two forms of attack, remove the exposure to air and/or coat in an acid. Tightly covering in plastic wrap or submerging in water are two ways to impede the flow of oxygen. As for the acid, there are several options; Lime Juice, Lemon Juice, Onions, Tomatoes, and Vinegar to name a few. Does that sound like a recipe, well almost, that is why guacamole is relatively stable as it includes several of the aforementioned acids.
